Title: Petimezopita Grape Molasses Spice Cake Recipe

Here is a recipe I found on greekfood.about.com

I adapted this recipe by changing the Spices to produce a reasonable Ginger Cake. (I think)

Prep Time 30 Min''s
Cooking Time 1 hour
(1 cup = American cup measure)

Ingredients
1 cup of water
4 sticks of cinnamon
1 tablespoon baking soda
juice and grated peel of 2 oranges
2 cups of olive oil ( I used 1/2 cup olive oil plus 1 and 1/2 cups Sunflower oil)
2 cups of petimezi (grape syrup)
1/2 cup sugar
2 tabs Cretan Raki or brandy (I used 2 tabs of Meataxa)
1 teaspoon (5ml) of ground cloves (I omitted the cloves & used 2 teaspoons of sweet mixed spice and 3 teaspoons of ground ginger )
4 cups flour
Sesame seeds (or chopped almonds)

Preparation
preheat oven to 180deg C
Boil the cinnamon in 1 cup of water until water turns brown. Discard Cinnamon.
Dissolve the baking soda in the orange juice.

In a mixing bowl, beat together the oil, sugar, & grape molasses until well blended. Add orange juice (with dissolved soda) water from the cinnamon, orange peel, raki or brandy, and spices.

Add the flour slowly until the batter is smooth.

Lightly oil the bottom of one or two cake tins and pour in the batter. Sprinkle the top with the Sesame seeds or nuts and bake in the oven for about 1 hour or until a knife inserted in the middle comes out clean.
