Turkish food websites in UK & puffy bread!!

REALLY missing Kalkan even though we have only been home a week. It''s amazing how the withdrawal symptoms kick in!

So we decided to have a ''Kalkan'' party with copious amount sof Efes, Rosato wine, and Turkish food.

We found a really good turkish food website that delivers to the uk but nowhere can we find the puffy bread. Now a Turkish food party wouldn''t be complete without some puffy bread and mezes!!

I''m thinking that the Turkish people don''t call it ''that puffy bread you get before your dinner'' so I thought I may have better luck calling it by it''s proper name.

Anyone know what this is??

Another good web site to buy Turkish wines and Efes by the bottle or case including mixed cases is www.tasteturkey.com

According to the internet it seems to be called ''Turkish pide bread'' but perhaps this is just people like us who don''t know the correct name!

I think you are refering to Lavas (pronounced Lavash).

We ordered a case of Rosato from Taste Of Turkey. It didn''t arrive so we chased it up only to be told it was in The DHL warehouse and all the bottles were broken! They said they would depatch another case in 48 hours. We then got a call saying they only has 3 bottles left and wouldn''t be getting anymore for eight weeks. We might try again when they get their stock in.

I can''t help with the bread, although I don''t believe it''s pide as that is unleavened flat bread and used for other purposes.

However, for those of you living in and around London, I have found a web site selling all different kinds of Turkish foods and other goods. They deliver free to the greater London area - not much good if you''re living elsewhere in the country I know, but it does look quite good so I''m thinking of giving it a try www.turkiyeden.com

Failing that, I discovered that my local Asda does sell Turkish products such as cheese in sealed tins which keeps well in the fridge, the wraps and yoghurt drink amongst other stuff that I can''t translate! Perhaps elsewhere in the UK it might be worth searching out those foreign sections in local supermarkets. So with the olives I bring back I can have a Turkish breakfast when the weather is good at the weekend, sit outside and take my thoughts back to Kalkan  :) :)

Hi the puff bread you are talking about is Lavash but the actual level of puffiness changes with each region in Turkey and for that matter each country in the region but here is a version you can make in your bread machine.

250ml water
3 tbsp natural yogurt
350g unbleached white bread flour
115g wholemeal bread flour
1 tsp salt
1tsp easy-blend dried yeast

For the topping
2 tbsp milk
2 tbsp millet seeds

Makes 10

Put the yeast in the bottom of the pan.

Add both types flour

Put yogurt salt in separate corners of the pan on top of the flour and add the water.

Use the basic or pizza dough setting if available.

When the cycle has finished place the dough on a lightly oiled surface and Knock it back gently and divide into 10 pieces.

Shape each piece into a ball and flatten with your hand cover with oiled Clingfilm and leave to rest for 5 minutes.

Roll each piece into an oval shape and drape over the back of your hands to stretch untill very thin,  if it tears leave it to rest a little longer until it stretches easily.

Stack the Lavash between layers of oiled clingfilm and cover to keep moist.

Pre-heat the oven to 230C or gas 8.

Place as many Lavash as you can comfortable on a backing sheet and brush with the milk and sprinkle over the millet seeds.

Bake in the oven for 5-8 minutes or until brown and puffed.

Transfer to wire a rack and cook the rest of the Lavash.

Serve hot or cold with a little butter.

Hi Phil

To make by hand:

Place the yeast in a bowl with the water which should be hand warm.

Place in a warm place i.e. airing cupboard (Or If in Kalkan At The moment Anywhere You Like) and leave until it starts to froth, then add to all the other ingredients.

Mix the flour and ingredients with you hands in a bowl until they form a ball then place on a floured surface and knead for at least 10 minutes until the dough is pliable.

Leave the dough to rise in a warm place until double its original size and knead again until pliable and it stretches as per the Bread Machine recipe.

Then follow the baking instructions.

Hi Buster, thanks for the 'Lavash' recipe - mine turned into elastic and I couldnt get it to work at all ... not that skilled a cook, but tried both in my bread maker and by hand, sadly no joy ... any tips?

You can also try to order Turkish Food in the UK from http://marketurk.co.uk Turkish Supermarket I did once and they are really fast and fresh, for those who misses that traditional taste of Turkeytional taste of Turkey

If you do live in or near London and are having serious Kalkan withdrawal symptoms, take a trip to Stoke Newington and Islington. ( Victoria line for Highbury and Islington then 73 bus to Stoke Newington)  There are dozens and dozens of Turkish shops and many very good Turkish restaurants. 

When we lived in Stoke Newington  before moving to Turkey we shopped every day at a Turkish butcher, baker and greengrocer.  The baker had a great range of Turkish breads baked on the premises and the greengrocers and grocers import foodstuffs weekly from Turkey.

Itis very unlikely that you will find lavas (puffy bread) outside a restaurant because it does not retain its puffiness when it is cool so it has to be served as soon as it is cooked.  Buster has the best idea, make it at home.

If you are not near London and still need your Turkey fix, the website turkishsupermarket.co.uk is excellent.  They deliver all over the UK and carry a huge range of products including alcohol.  Very reliable service and reasaonable prices.
